Caribbean Jerk Chicken Salad

1 Pound Chicken Tenders
½ Stick Butter
Caribbean Jerk Seasoning


1 Bag European Blend Lettuce Mix
¼ Bag Fresh Baby Spinach
½ Cup English Walnut Pieces
½ Cup Blue Cheese
1 Granny Smith Apple, Peeled & Cubed
(Sprinkle with lemon juice to prevent from turning dark)
¼ Cup Sliced Red Onion
¼ Cup Raisins

½ Cup Olive Oil
2 - 3 tablespoons Honey
2 teaspoons Mustard
2 tablespoons Lemon Juice
2 tablespoons Grapefruit Juice
1 teaspoon Vinegar
¼ teaspoon Jerk Seasoning
1 teaspoon Minced Garlic
Salt & Pepper to Taste

Melt Butter in Pan, Add Tenders in Baking Pan in Single Layer, Sprinkle with Caribbean Jerk Seasoning.

Bake @ 350° for 30-45 minutes until done.

Chop Chicken into Bite-Sized pieces.

Combine Salad ingredients and chicken.

In a separate bowl combine dressing ingredients.

Add desired amount of dressing to salad and toss.
